Banana Flaxseed Mountain Honey Muffin

In the fridge I saw a bowl of overripe local bananas – what we call ‘Pisang Mas’ here. So I googled for banana muffins with flaxseed (because I just ground a fresh batch for the week) and in true style, had to modify it. The result is awesomeness! Here is my version: 

Wet ingredients 

1. Bowl of ripe mashed bananas (there were ten small ones in my bowl)

2. 4 tbsp ground flaxseed 

3. 1 egg

Dry Ingredients

1. 1.5 cups plain flour 

2. 1 Tsp baking soda

3. 1 tsp salt

4. 2 tsp baking powder

5. 5 tsp raw coarse sugar

6. 1/2 cup of soft dark brown sugar

7. 4 tbsp milk

The squirt of mountain honey turned out superb!  There’s a nice crunch for the top. Overall, this is not a sweet muffin just the way I like it and it’s very healthy-no oil, no butter!

savoury oat porridge

saucepan. Oil. Sauté minced garlic, ginger. Add minced meat and brown. Flavour with a tiny bit of curry powder and salt. Add water. Add oats. Season with salt and white pepper. Garnish with spring onions and fried onions. Bring to work. Result? Delicious and healthy breakfast for champions.

Hei Sushi

The wonderful thing about living in this part of the world is getting to have a taste of global cuisine which is halal. Every time I go overseas on holidays, I would wonder if I could survive happily living in a place where I only eat one type of cuisine because that happens to be the only available halal cuisine. Inevitably when Muslims travel to Western places, they’d have to eat Indian or Turkish cuisine- kebabs, curries, Briyanis… Not that they aren’t delicious, don’t get me wrong. But living here in a multicultural tiny island, everyone is pampered for choice when it comes to food.

And I’m luckier to be living near a halal sushi place! The menu at Hei sushi keeps changing (for the better) and just a few days ago, I tried new things there. Such as my new favourite sashimi – managatsuo or butterfish. The taste is exactly like butter! No kidding. 

That day my friend and I had that as well as the usual tempura vegetables, a soft shell crab crepe and Japanese curry rice.

Jamie Oliver’s One-Cup Pancake Recipe

So the boy wanted some pancakes. I was too tired to separate the white from the yolk. I remembered then of some Jamie Oliver’s recipe going round on FB. A quick google and voila! I got the recipe and made the pancakes in a jiffy.

Recipe

1. One cup self-raising flour

2. One cup milk

3. One egg

4. One pinch of salt

The verdict: You have GOT to eat them hot. It’s not fluffy pancakes for sure. But for kids and if you’re stretched for time, this is a go-to recipe.
