Mediterranean style braised lamb shank

lamb shank needs to be braised for hours. Last night I made this in the oven with s lot of liquid and the result was awesomeness. Today I experimented by just roasting the other two in the oven covered but no liquid. The result was not fork tender meat even though I roasted the shanks for the same number of hours. 

Last night’s one was great. After seasoning and browning the shanks, I placed them back in the pot with olive oil, water, a chicken cube, fresh rosemary, a can of plum whole tomatoes, a can each of kidney and chickpeas, a head of garlic unpeeled, 

salt to season and let it to boil. After that I covered the pot and place the whole pot in the oven at 180 degrees Celsius for 2.5 hours. 

If ever you’re making lamb shank, make sure they’re braised. I’ll be looking for more flavours to experiment lamb shank.

Banana Flaxseed Mountain Honey Muffin

In the fridge I saw a bowl of overripe local bananas – what we call ‘Pisang Mas’ here. So I googled for banana muffins with flaxseed (because I just ground a fresh batch for the week) and in true style, had to modify it. The result is awesomeness! Here is my version: 

Wet ingredients 

1. Bowl of ripe mashed bananas (there were ten small ones in my bowl)

2. 4 tbsp ground flaxseed 

3. 1 egg

Dry Ingredients

1. 1.5 cups plain flour 

2. 1 Tsp baking soda

3. 1 tsp salt

4. 2 tsp baking powder

5. 5 tsp raw coarse sugar

6. 1/2 cup of soft dark brown sugar

7. 4 tbsp milk

The squirt of mountain honey turned out superb!  There’s a nice crunch for the top. Overall, this is not a sweet muffin just the way I like it and it’s very healthy-no oil, no butter!

savoury oat porridge

saucepan. Oil. Sauté minced garlic, ginger. Add minced meat and brown. Flavour with a tiny bit of curry powder and salt. Add water. Add oats. Season with salt and white pepper. Garnish with spring onions and fried onions. Bring to work. Result? Delicious and healthy breakfast for champions.

Jamie Oliver’s One-Cup Pancake Recipe

So the boy wanted some pancakes. I was too tired to separate the white from the yolk. I remembered then of some Jamie Oliver’s recipe going round on FB. A quick google and voila! I got the recipe and made the pancakes in a jiffy.

Recipe

1. One cup self-raising flour

2. One cup milk

3. One egg

4. One pinch of salt

The verdict: You have GOT to eat them hot. It’s not fluffy pancakes for sure. But for kids and if you’re stretched for time, this is a go-to recipe.

Pizza baguette with the Boy

While the older child was having tuition, I roped the younger one to make pizzas.

This time round it was the simplest pizza ever: no dough making, no sauce making. All we needed were baguette, ready made pasta sauce, beef
pepperoni and mozzarella.

When the pizzas came out of the oven, The Boy was so amazed. ‘Whoa!’ He exclaimed. ‘How did you do that?’

I almost wanted to reply that I had magic powers but remembered to never treat a child like a baby when it comes to knowledge acquisition.

So I did the noble thing- I ignored the question. :p
